Thanks for the help. I build my stand for 15 gallon kettles so now that I've upgraded the kettles they cover all my exhaust ports so to speak. I will make some modifications and report back.

I'm looking at the Milwaukee mw102. It looks like it meets all the criteria but I can't tell if the probe has Flushable junctions, I guess that's the probe they are referring to. Anyone have any ideas on this one?

quick question about the lm317. If I use it with a 12V transformer thats delivering 17v on my meter and between 300 and 500ma would I need to add an additional heat sink to the lm317? I tested it for 30 minutes on a breadboard without and additional heat sink and the top of the lm317 reached...
