    Porters & Stouts are great for first time brew! They can be very forgiving as the strong taste will normaly cover the minor screw ups...

    I'd allways go for a longer bottle conditioing. Generaly I try to have it in the bottle for at least 4 weeks or more (much more depending on the beer). I find that the beer mellows more nicely this way. In your case two in the primary and three in the bottle sounds good. How is the beer going...

    buy a gardening hose (10m) chop it up and discart after use... don't know how it is in the states but here it comes down to a few euro cents per blowoff tube which is a great price for not having to clean it!

    Never happend to me.. Were you using whole hops of are we talking the residue you get from pellets? Yeah I guess try using a wider blowoff tube and get a bigger carboy of brew smaller batches. Cleaning must have been fun. :) And YES pictures please! :)

    Don't worry about it. The big kausen (foam) is only present during the most active part of the fermentation so your beer is probably still happily fermentig however, just like any party that lasts 3 week, it has lost some of the initial flare. :) I'm guessing that the recipe says your FG will...
