Thanks! I do see more yeast in the bottom but I will build this up 2X to make sure that I am good on the count. I don't think there is a kraeusen on this style of yeast. They claim its top cropping but it defiantly behaves like a mutant lager type.
I am thinking about a back up yeast in case my Wyeast Kolsch 2565 starter dosent take to my first 12 gallon batch. The starter is just starting to become more active ( no Kraeusen but lots of yeast sediment... why is that? )and I plan on pitching a second smak pack and some additional pre...
I was thinking about usining propylene gylcol ( non toxic RV antifreeze ) through my work chiller and then using another wort chiller submersed in ice water and hooking it up to a pump. anyone ever try that?
I actually did a little research on the Wyeast 2526 Kolsch. It is pretty finickey it appears that it has taken up to 6 days for the starter to BEGIN to ferment! I would certainly never use this yeas if over 3 months old.
Other thoughts:

I am think about this Kolsch. Perhaps this strain behaves like a lager strain. I am going to try putting the started in the basement at 62 - 63 F and see if that unsticks the ferment.
The yeast has a manufacture date of Aug 15,2007. I put one pack designed for 100 billion cells in my started and am hoping to grow this to enough for a 12 gallon batch.
