Any Lallemand Philly Sour feedback or experience to share?

Has anyone tried overbuilding a yeast starter to repitch yet? I know it is not recommended and the subsequent pitches would most likely not sour as much due to the stress of the lower pH. I haven't done this for years now as probiotics are easy to come by but when I used to do kettle sours...

    A Tribute to Hunahpu

Brewed a 3 gallon batch of this 1/16/17 with an OG of 1.124. Kegged it yesterday and the FG was 1.047. OG was 1.128 and FG 1.030 which makes it around 13%. I can't believe it but it tastes great, didn't...

    Brewing on a Weeknight

I have a grainfather which is the only reason I can do this but I prepare the water in the morning before work, set the temperature controller to the proper temperature and plug it in to a belkin wemo switch which I can remotely turn on from my phone. I turn it on an hour or so before I plan on...

What breweries or beers to try while in California?

Went out there a few months ago and managed to go to 24 breweries over the course of a week. Best ones IMO were Russian River, Cellarmaker, Fieldwork, Faction, Rare Barrel and Bear Republic.
