I chilled my beer right after bottling... HELP

There's no problem. You've just delayed the carbonation a bit. Warm up the beer to at least 70 °F and wait 2 weeks more before opening one.

Where to buy a Control Panel (Gas)

Obviously you can just control the pumps with their own switches. It's nice to have it in one box but the pumps aren't actually related to the PID in any way, right? Likewise the temp reading from the other vessels doesn't actually affect the PID. With a HERMS system the only PID-controlled...

Where to buy a Control Panel (Gas)

Blichmann's Tower of Power gas control module would do. It does use a 120V gas solenoid but it's included with the module. The ToP only controls one heating burner / one sensor / one gas valve so it's not a complete 3-vessel brewing control panel. Note that the Blichmann product naming is...

Pin Lock Kegs - Good Deal?

True, but whether this matters depends on your setup. If you are height constrained pin locks may be better since they are shorter. Some have PRV, some don't. (I have both). Depressing the gas poppet with your finger is not hard, or you can just grab a spare gas QD to do it. Never heard of...

    White Labs....losing faith

Do you have a source for this? Maybe he's changed his routine but in his 2011 book Brewing Better Beer he says if he's using new yeast he always makes a starter.

    White Labs....losing faith

Your White Labs batch was WAY way under pitched. Is that yeast 4 months old? Viability has dramatically dropped by then. Also lagers need more yeast than ales. You really should make a starter when using liquid yeast. Use one of the many pitching rate calculators to help.

Boil equipment for 5 gallon batches

I started with an 8 gallon kettle for my 5g batches and I would definitely recommend something bigger. If you already have an 8g lying around you could try it but if you are buying new I would STRONGLY suggest 10 gallons.

First time using Steeped Grains, WAY over on OG

Several things are wrong here. First, when I put those ingredients into a recipe calculator for a 3 gallon batch (post-boil) I get an OG of 1.079. So your 1.058 target number is suspect. Second, if you are using extract it should be practically impossible for you to miss your target. The only...

    Calculating pressure

Your calculation is failing because the ideal gas law is not applicable to this situation where you have a mixture of liquid and gas. The solubility of CO2 in water is not determined by the ideal gas law.

Brain fart - froze my starter

If you have time I would probably make another starter of the same size using that yeast. That will ensure that things are going again. If you don't have time, you could still just pitch it. Even if half or more of the yeast cells have died you will still have a passable number.

    100F beer

It really depends on how long it was at 100 °F, but assuming it was just the 2 days since you dry hopped, probably not a big deal. Obviously if it fermented at 100 °F the entire time that would be a very different story.
