The primary purpose of a 60 minute boil is to eliminate DMS. Some people will actually boil 90 minutes or even two hours for further DMS reduction.
Also, it gives you plenty of time to have a few while brewing :)
The beer will be fine sitting in primary for another week(s)/month(s) Order a capper online or go to a brew shop if there is one near you and buy one. No rush
A blow off hose is just some plastic tubing stuffed down the hole of a carboy. The other end is usually placed in a bucket with shallow water/vodka/starsan. It allows the gunk produced during a vigorous fermentation to be guided somewhere.

You could probably throw in some dextrose if you are really desperate to up the ABV, but I would say just leave it as is. You will have plenty of chances to brew up higher alcohol brews in the future.
And just think - people in Oklahoma have to drink 2.4% beer their whole lives!

The last liquid yeast pack I ordered from them was no good. I live in Dallas and I know it ain't any cooler in Austin. Probably tough for them to ship liquid packs at all with temps frequently around 100. I am probably going to be getting yeast from my LHBS until the fall. Still love AHS though!
