    my top all time fav is the legendary first west coast amber Mendocino Red Tail Ale! the absolute most epic balance of hops and malt Ive experienced in any brew :) and i finally got around to getting some warrior hops to brew a clone :)

    The Brewing Smell

    Apparently you need new roomates :) Seriously tho....... for me at least, and im sure im not alone. the smell from the boil is so luscious, that, days later I literally get romantic, olfactory flashbacks of the smell of the wort from the day i brewed, and jones for more! oh, btw...

    Red Tail Ale clone?

    thanks man! I woulda thought there would be more hops in there tho based on hoppieness of the Red Tail im enjoying right now :) But I guess homebrewing it all about tweaking things till you get the perfect balance that you enjoy. does anyone else like Red Tail as much as me or am I nuts? :)

    This is my all-time favorite American Amber Ale. Ive been searching for many years for something that I like better, but still havent found it. :) Hands down the most perfect balance of hops. anyway, anyone ever come across a good recipe for a Red Tail clone?

    Commercial Beer Aging Question?

    I recently got some Victory Hop Wallop and I coulda sworn on the outside of the case it said that since it was bottle conditioned beer, some flavors will mature and can be aged up to 2 or 3 years.

    Anchor Steam Christmas ales clone recipes?

    I havent had it for many years, but I know they used to have a new recipe every year. Is it concievable that I could find recipes based on each year? the 1989 & 1990 ones were my all-time favorites hands down!

    another 'brewed my pumkin ale today' thread :)

    shared a few with other beer fanatics, and they said it was every bit as good as the Post Road Pumkin ale they had. But the nutmeg in mine gave a better perception of pumkin pie which what i was going for. :) if richbrewer and chimone still want to trade a couple, let me know

    Just an update since I have a positive one :) As most people told me that the spiceyness i was worried about would probbaly mellow, it indeed did. I left it in the secondary for 2 weeks, which also added great clarity, wow! i shoulda took pics. Anyway, its been in bottles now about a week...

    why would a brewer use maltodextrin?

    well the HBS guy suggested I boil it in a cup of water to santize it and disolve it first, then add to the bottling bucket. just curious if anyone has ever done that and had success or had issues

    does shipping homebrew have to be ground only?

    ******* question of the month here! can shipping homebrew via air-freight services cause any problems at all? like with pressure or anything weird causing the bottle to blow up?

    Just brewed my Pumkin Ale

    yup. i added an extra 1/2 gal to the primary thinking it would be enough since the 6lbs of pumpkin raised the water level in my boil pot by around 1/2. but now i know! hell maybe i can use the trub to bake a pumkin pie with! :)

    how much were you able to siphon to secondary? i just racked mine and was only able to siphon about 4 gals, which concerns me mainly cause of the space left at the top of the carboy.
