I think the lid that I'm using leaks. It came from a different bucket and the seal is to thick for the rim. Any ideas on how to test for air leaks during fermentation?

The OG was 1.060. I haven't taken a FG reading yet since I can still hear it bubbling through the bucket. Sounds like a hot soda being poured into a glass. Once the krausen falls out I'll take an FG reading. Until then I'll let the yeast keep doing it thing.

Can oats, Specifically ones from Quaker Oats that are unflavored, be used as a main ingredient/base? I have only made one steeped grain extract kit so I don't know what's possible.

OP said a 'bottle' fell out leading me to believe its LME. I would boil it til hot break and then siphon (to avoid oxidation by pouring) it to the fermenter given there is enough room, something akin to the DFH 120 late extract/wort addition. If there is no room in the primary you may be SOL...
