    yeast is used to carbonate the soda, and the sugar both reacts with the yeast and sweetens...not 100% sure if that answers your question, i hope it does.

    Safrole is not nearly as dangerous as you would think

    very very interesting. i always heard that sassafras could be dangerous to your health, and figured because they were testing on rats, you would have to take in a rather large amount of it for it to cause any real damage. ive never looked into any of this myself. thank you for the info.

    Yeast Question

    i have the same issue. up until christmas, i was using bakers yeast. i just brewed a new batch last thirsday with champagne yeast, and its just now starting to having noticeable change in pressure. i didnt do anything different really, so it must be the cold weather.

    ive been doing natural carbonation for a little bit in plastic 2-liter bottles for a little bit, but im looking for an alternative method (preferably not using yeast) because i may be starting to sell it at a local store, so i dont want to have the possibilty of it exploding in the bottles...
