I find run the water a few hotter. Add to run with out grain. Let it hit 168 f and mix in grain. It will drop to 154. More consistent than adding hot water to grain and cold tun

Pressurized ferment in cornie keg. With second keg connected to gas port to help stabilize gas pressure control and over flow tank. Been pressure fermenting about 10 batches. Quick process. Already carbonated. Drinking in 2 weeks
Just made a octoberfest ale on 9/25 brought to wedding on 10/6. 10 days old. Was a hit all 5 gals gone in 4 hours with about 15 people drinking it. Pressures were 30 to 50 psi for the first. 4 to 6 days at 65 to 68 degrees. Used second cornie for blow off. Wad a good beer. Should have made 5 gals!
Finishing first keg of pressure ferment. Came out great! Same taste from pitch + 2 weeks and2 weeks after that. Also the clearest looking beer after cold transfer plus a few days.
