Belgian Dark Strong Ale The Pious - Westvleteren 12 style quad - multiple

Nyrkki, I'm in the same boat as you. Honestly I think it'll be just fine without the "lagering" stage. Maybe not come out exactly like a Westy 12 but still an excellent beer. Jamil's BDSA from Brewing Classic Styles that has won numerous awards doesn't include the lagering step. His beer...

    What are you drinking now?

Just home from a business trip to Chicago and stopped by Binny's Beverage Depot for the first time to stock up on beers I never get to try. Started off with a St Bernarus Pater 6 in a goblet that was in the sampler pack I bought. I'd give the beer a "B"; good, but not on par with others of...

Belgian Dark Strong Ale The Pious - Westvleteren 12 style quad - multiple

Used too much sparge water and didn't boil off enough so ended up with closer to 6 gallons than 5 and OG is 1.084. Still to style but not the same as Westy 12. I'm also following Jamil's fermentation schedule and kept it at 68F for the first three days and am only allowing to to get to 72F for...

Masking the Alcohol Taste, when already bottled?

It could completely mellow out but it could take many months. Just don't rush it and give it time. Good luck!

Masking the Alcohol Taste, when already bottled?

I'd ignore the batch for a month and try it then to see if it mellows; if not, wait another month. For SURE I wouldn't cut it with anything! Give it time - it'll mellow eventually

    best beer you ever made!

Just tapped my first couple of pints of my ESB from Brewing Classic Styles...very nice! Will be making this again, for sure.

    What are you drinking now?

Just tried - and admit, dumped - the Shafley Pumpkin Ale I just bought. It had awesome reviews on Beer Advocate but I just don't get it. WAY too much spice and it also tastes artificial. I have 5 left so I hope the wifey likes:) Now enjoying a St Bernardus Prior 8. Good stuff, although not...

    What are you drinking now?

Sam Adams Octoberfest... One of the few non BMC beers the wife likes so I'm happy to have one with her.

    What are you drinking now?

I only meant that it'll oxidize very quickly.

    What are you drinking now?

Hmm, I actually like that beer - maybe it was just skunked from sitting on the shelf too long. I think once it's uncorked you're screwed. Where are you in Iowa? I ask because I was in a local HyVee (Davenport) yesterday and saw someone pick one of those up. Don't see them go very often!
