    RYE PA Critique

    Makes sense to me. Come to think of it, I just did a black IPA, full of simcoe and cascade, and I used carafa for the color. Worked quite well. As for the rye, I've been using 30% for all my pale ales, with 30-50 IBU, and it's been good for me. Like you said, personal taste. Cheers

    Dealing with fruit flies

    Get some sodium metabisulphite (wine making sanitizer) from the LHBS, mix up the recomended dosage in a sprayer bottle, and lightly coat the top of the bucket. I've been doing this for years and it works fantastically. No bugs in my beer.

    I stumbled upon this article a while ago looking for the same answers as you. I've been using it for high and low gravity brews that I have filtered and still wanted to bottle. Use the chart at the bottom and you won't go wrong. Hope this helps you. Cheers...

    Yah, I've never tried washing. Definitely something i'm going to try sooner rather than later. But the old ale will be a while. It's in the keg right now, and I'm trying to save it until at least the fall. Do you think the yeast will still be good by then?
