So i finished my first 6.5 gal batch by breaking it down into one gal to clear and then racked again in to swing tops. I used meta and finishing to prevent renewed fermenting but still got some less in the bottom of my swing tops so I am sure it restarted briefly i am wondering if the cough...

Today I was thinking about the wintergreen that use to grow near my grandparents cabin and I started thinking about what a wintergreen berry mead might taste like.
Has anyone ever tryed this? or maybe have an idea how much wintergreen I might need to do a gallon test run ?
It looks to me like the comb is just aged and honey can be a variety of colors depending the flowers it is made from. Buckwheat honey is almost black. So as long as it isn't growing fur or smells like paint your probably fine
5 gal generic honey blend + 1gal cranberry blossomhoney +1 Spring blossom blend +1 gall buckwheat and orange blossom for a grand total of 7 gal brewing
I am doing my first get bottles of mead also, and just like you I started reading this forum after fermenting started. Hahaha "de gassing what's that" I said. Your not alone my friend but it's so much fun.
My first ever one gallon batch did this in the end I decided it had gone sour I assumed due to some lack of sterilization on my part. I dumped it and tried again with better success so far. Hopefully you find a better solution I would cry if I had to dump 15 gallons of good brew.
