    New Cider Maker

If it's stable for a few days it's most likely ready to bottle. Then let it sit for a few months to clear and mellow (or as long as you can force yourself to wait) and give it a taste. If your not sure if it's ready, leave it a bit longer - if there is yeast and sugar remaining in the...

Questions about my first batch of cider.

All should be ok though it did go off quickly. Was it extremely warm where the Mr Beer was sitting? It's usually preferred to keep the primary in a slightly cool area so the yeast can take its time. I'd prefer to see the yeast take about a week to stop bubbling. Try different yeasts too eg...

Cider or poison, I brew, you decide!

Instead of adding more juice, add a kilo of brown sugar to the original 23l vat. Super alcohol, and after, sweeten with some jice, splenda etc.

1st time results / bakers yeast

Bread yeast eats the sugar really quickly. A champagne yeast or even a cider yeast usually goes slower, making a more mellow brew. I've used bread yeast once before and I had to let it sit for a few months before it cleared and lost the yeasty undertone.

    step by step

There are several specific cider yeasts but can be hard to find. Try a champagne yeast that should be available at your brew shop.

Apfelwein, take two. Ferment in plastic jugs?

The best way is to give it a try! It could become your favourite recipe (not the fungus).

    Sulfur smell is normal... right?

Let it brew a bit longer and see if the smell goes away first. You could be too impatient :)

quick cider, is it ok or too quick?

from the backyardfarmer... "Four or five days before you plan to drink your cider get hold of the best possible apple juice you can, you either slip down to the local market or supermarket and see what is available, or you use a juicing machine. Juice a blend of about two kilos of tart and...

    getting rid of bottle gunk

If it tastes perfect, why mess with it :) All our home brew beer has sediment in the bottom and we just pour slowly until reaching it.
