Well, finally racked and bottled the leap year mead yesterday. Decided to let it sit on its lees for the last 6 months or so. As a result, the scraped vanilla bean I originally left in there had soaked up so much fluid it resembled something more like a banana peel. :P
The mead smells...
I'm not in any hurry to get it off the yeast either. I should really look up my notes of which yeast I used to find out whether or not this is a good idea....

Heh, yeah I guess. I originally didn't even know how it could be done - knowing nearly nothing about mead - but with a bit of advice and interest from everyone, it's taken off!

4kgs honey, 12 litres of water, yeast and some stiff arms from frantic shaking!
Initial gravity of 1.110, bubbling within hours - and a few days later my cupboard now smells fantastic...

Pasteur champagne yeast sounds good to me. I guess we'll all be using different local honey anyway, so that should get some really interesting different results.
I think BigKahuna's recipe sounds great, leaves it nice and simple, and also open for extra ingredients at secondary if anyone...
