    Vanilla Chocolate BrewHouse Stout

Good. Thanks for that. Since there is no boiling involved with this kit, I was planning on adding the chocolate powder to the primary. From what I gather from other places, about 140-150 grams (4 - 5 oz) ought to do it. For the vanilla, I have some pure vanilla extract that has caramel in it...

    Vanilla Chocolate BrewHouse Stout

I have it in my mind that I would like to brew up a batch of vanilla chocolate stout using a BrewHouse stout kit as a starting point. That is about as far as I have got so far. I am sure there are folks here that have done something similar and I am looking for direction. I would like to...

Happy Trails Turbo Mead - The Story Thus Far

The recipe is outlined in the very first post of this thread. I gave a bit of diary as time went in further posts. I followed my nose making this and treated it as a regular wine from grape juice. I do not have an exact method or procedure. I did heat the crabapple juice to boiling. I...

Happy Trails Turbo Mead - The Story Thus Far

October 31, 2011 - Happy Trails Turbo Mead v1.0 is in the bottle. I used a 2 part turbo clear and ran the mead through a fine filter. The result was a crystal clear product. With an SG of 1.05, it is sweet. Taste is of apple, honey, and grapes in that order. I am very pleased with it. It...

Happy Trails Turbo Mead - The Story Thus Far

Octobr 21, 2011 - Time to stabalize and start the clarification. The SG is 'stuck' at 1.050 although there is still indications of slow fermentation. The taste is definitely sweet as mentioned. But I am happy with it. There is a good flavour profile and a good kick of alcohol. I am debating...

    Cloudy cider

Hmmmm.. I thought I posted this already. Oh well, here goes again. Jacob_Marley: Keep those novels coming. Lots of great information there. I do have one question though. Being a details person (probably too detailed at times) and the fact that I live in the metric world but still use...

Thanks Jacob_Marley. I forgot to reply. Very good information there.

    Cloudy cider

Okay, I have managed to clarify this batch of cider by filtering it. I was worried about the flavour being stripped out like some people warn. I noticed no difference and am very pleased with the clarity. I want this to be sparkling. I assume I will have to pitch in some yeast and more...

carrot n ginger cider (ginger fear )

I really want to make a version of this. I have a huge supply of pears and carrots and fresh ginger is quite cheap right now. I juiced up some pears and carrots and found they are great combined. I plan on making up a 24l batch with the primary ingredients being: 16l pear juice 8l...

Happy Trails Turbo Mead - The Story Thus Far

September 20, 2011 - The brew continues to slowly ferment. The bubbling in the air lock is quite regular. Gravity has dropped to 1.056. I drew a sample. As before it is very sweet but not cloyingly so. There is a strong honey-apple flvour to it. I can also taste the grape at the very end...

    Cloudy cider

I agree, no sense in rushing. I will wait a bit longer. I hope to make it sparkling. In the end if it is not clear, it won't really bother me too much.

    Cloudy cider

Thanks for that. I think I will wait another week or so and then rack and clarify again. It is weird becasue the first time I made it you could almost watch it clear. I may try the wine filter and charge the result with a small amount of yeast when I add the sugar.

    Cloudy cider

Yup, that is a lot of sugar. It is quite strong. I did not use any enzymes. I will wait awhile longer and then try again. Thanks!

    Cloudy cider

This is the second year I have made sparkling apple cider. The first year's batch worked brilliantly. Crystal clear sparkling cider. This year's batch has progressed to the point where I would normally bottle. However, I find that the clarification process did not work like last year. There...

Happy Trails Turbo Mead - The Story Thus Far

Indeed so. "We thought about it for a long time, 'Endeavor to persevere'. And when we had thought about it long enough, we declared war on the Union."
