If you have not already, get a good mash paddle. My first AG batches were difficult using a long spoon to stir the mash. Fwiw... My first big beer came under target og and then came in high on fg!
An FYI. I did a 4 cup (1 gallon) batch of sushi rice. I used 1 cup of water to 1 cup of rice. Crushed up 2 yeast balls and layered it into a 1 gallon jar from walmart. Batch started 2 weeks ago. I have not tried any yet but it smells very good. Like really sweet vanilla. Going to wait till 3...
One guy in here did a 5 gallon and it did not come out very good. I suspect the problem that occurs is that it takes so long for that amount of rice to cool to pitching temp that some unfriendlys got in his batch. Pure speculation however.

Finally read the whole thread. I have yeast balls on order. Got a bag of regular rice and a bag of sushi rice. The largest Asian market in Sacramento area does not have yeast balls. Bummer. They did have live flounder however. Haha. Even frog legs! I plan to start some smaller sized 2.5 cup...
I am thinking white labs wlp001. BTW.. You will not reach 1.000 fg. Especially if using extract. I dont think its possible to ferment beer to 1.000. There will always be some sugar left. Even more so with stout.
I did not get to brew the coffee stout this weekend as I hoped. This career crap is really getting in the way of brewing. Only got one day off this weekend. I did have time to at least brew the Falconers Flight hopped pale ale though. Shooting for this weekend if I can have 2 days off.
Here's a lame idea... What if one of your ball valves is being overheated while the fire is on. If the flame is on really high? I eyeballed inside of one of my valves and it looks like there is a plastic like sealing area. I wonder if those things can melt if exposed to direct flame? There are...
I like the recipe brewfunk. I will scale this back to a 2 gallon batch as a trial. I am going to use fresh brewed coffee in the end of the boil. Brewing this and a 6g pale ale this weekend. I might just do a quicky BIAB 1 gallon in this coffee stout with grain. This sounds like a lot of fun...
