I do my best to wait at least 2 weeks before I open my first test bottle, and even then it's just to make sure that "something" is happening.
unless it's an IPA or a Hefe I try to let it condition for a couple months before I put it into drinking rotation

1Lb seems a little light on the boil gravity.
most comments I've heard have suggested 1.040 boil gravity to optimize hops utilization.
admittedly I don't have first hand knowledge to back it up but I would probably do all the DME at 60min
bottled last night and the flat sample tasted very good.

Racked this to a secondary and added the 2oz of Dry Hops two days ago and the smell was absolutely wonderful.
FG was 1.021 so I think it's coming along great.

Yeah, I'm planning to start building a tower next month to get into all grains.
I'm a blacksmith/knifemaker so I've got scrap all around to build with and I'm a good hand with a welder.
