Thank meadlover. So there is no risk of oxidation if you don't carbonate the mead while bottling? I am used to beer making where carbonation is key. Didn't know if that translates to mead.
What did you use to sweeten once you killed the yeast? Just more honey? How carbonated should this be? Do I need to use tablets to carbonate and if so what is the usual recommendation of tablet to use?
Try outting a form of riser in between flask and stir bar. I had to use the little rubber half circle stoppers from a craft store to get an appropriate separation to not throw the magnet. I just put them in a cross pattern around the fan center and sat the flask on top.
Let it age in bottles is fine. But you need to keep the bottles around 55-65 for them to mature. Throwing them in the fridge will slow their progression down.
Honestly, I had no reason for the 90min boil other than I have been researching a lot of DIPA. Staring most of the time at the DFH 90min clones. Glad you mentioned it, caused me to do research.
Your hop additions look purposeful, ill give it a try. Now more time researching how to make a good...
Sorry, guess the way I wrote those is confusing.
I mean 1oz of both citra and cascade not .5oz of each to make 1 oz. That applies to the other ones where I put two hops at once as well.

.5oz Citra / Centennial - 15min
1oz Centennial - 5 min
.5oz Citra / Centennial Whirlpool
1oz Citra / Cascade Dry hop

The Cascade and Citra were going to be dry hop before I started reading about adding them at flame out and letting them sit for 10 min before the final wort cooling.
