    Well, it fermented on to about 1.012 which is where it needs to be. Tastes alright, but there is an Astringent aftertaste that is not over powering, but is present enough to make drinking it unpleasant. I did let the water get a little a little too hot when steeping the grains, so maybe that...

    Will I ever drink mit hefe again?

    Gotta say, I love Shiner Hefeweizen. May not be up to par of some of the other brews, but it is just a good kick back beer. Anyone know of a recipe for it?

    how long can crushed grain stay for?

    I have been told it is usually okay for up to 4-5 days, but if you plan on waiting longer you should put it in the fridge.

    Thanks. Yeah, that is the plan, I suppose. When I take the hydrometer reading, am I looking for normal fermentation gravity? Or can the hydrometer tell me whether there was an infection by being too high or low? Thanks again.

    The other time was a kit. This is the first time I have used a recipe. Fermenting in a pale and I am not dry hoping in the primary. The beer had a very pungent hop smell when I finished boiling the wort. It's probably 74 where the fermenter is.

    Have an odd smell coming from my fermenter. This is my first time using hops so I'm not sure if it is an infection or just the natural process. It is sort of a very light sulfur/egg smell mixed with beer, which has me very worried. Yeast Strain was White Labs Hefewiesen VI WLP380. I pitched it...

    Cooling wort with ice.

    I learned last night how difficult it is to cool a wort once it is in a plastic bucket. :mad: I didn't have any ice and the tempt didn't drop nearly as much as I thought it would when I threw in three gallons of ice water. Live and learn. Gonna have to try this ice thing some time.

    My first beer (a wheat) is in the secondary right now. Probably start a hefe Saturday. I enjoy wheats, hefe's, bocks, and long walks on the beach. Yep, SMU for grad school; Oklahoma for undergrad.
