    Very dumb mistake

    Its fine. What would that be 1 tbsp of alcohol in 5 gallons beer? Its not like the rubbing alcohol would have bacteria in it, either.

    Keep sanitized tin foil over it and just let it go. As soon as it slows down, put the airlock back on. Everything is fine.

    Another Bad Brew - please help

    How long did you let it ferment? Bottle condition? What was the OG and the SG when you bottled? I want to say acetaldehyde - let it ferment and bottle condition longer. Did you use wheat adjuncts or pilsen LME/DME or Pilsener grains?

    Halfway through my first full mash/full boil! (In my apartment!)

    Pre-boil volume was exactly 3 gallons. Boiled down to 2.3-2.4 gallons, and my carboy holds 2 full gallons. Having my PBV at 3 gallons is probably why my OG was 1.05 and not 1.06. Too much sparge water.

I used the 'easy partial mash' guide, changed my recipes for a 2-gallon IPA recipe (chinook + cascade + cascade whole hop dry hop), and mashed on my stovetop for 60 minutes at 153.     Upping ABV

    It depends on the style of beer. I personally wouldn't be a fan of upping the ABV of certain styles of beer just for the hell of it. Instead, consider making some double or imperial style beers that are suppose to be at 7-8%.

    What To Brew (as a Noob)

    +1 for English Brown Ale. It's pretty much ready from start to finish in 3 weeks, also. Good for beginners who haven't learned the patience it takes for beer :)
