    Marzen/Oktoberfest Imitation Ale

So, did you brew this? How did it turn out? I have an Oktoberfest coming up 10/5, and would love to have a Märzen-like ale for that party.

Randy Mosher's Buckwheat Honey Black Beer

OK, folks, Google returns precisely two hits on the name of this recipe if you put it in quotes. A friend at work gave me a 3-lb container of buckwheat honey as a 'brewer's challenge'. It's Eastern buckwheat, which I gather is stronger than Western. So, has anybody brewed Randy Mosher's...

    Whitelabs WLP 800 Temp confusion

So much of the time, these threads peter out, and nobody comes back and finishes the story. So here I am with a followup to the story, in case someone later wants to know. The Propensity Pilsner I wrote about a year ago turned out well, though there's an odd story behind it. After five weeks...

    My first wild yeast fermentation

So what's going on with this brew now? (And hello from Silver Spring!)

20 lb of sugar and a jar of yeast nutrient

I made this sugar a while ago, and then used it to make a dubbel that came out very well. When I made it, I cycled between 240 and 290 four or five times. Each time it got darker, until by the last time it was the color of cola. I'm guessing each time you cycle it, you produce more melanoidins...

    oatmeal stout stuck at 1.04

Google around. I'll bet Windsor is your problem. I made a dark ale for Christmas with Windsor that stopped at 1030. I repitched with Nottingham but nothing happened. So I waited a few more days, then bottled it. The resulting brew is fine, after a few weeks of conditioning. Before it...

Extract Westmalle Dubbel clone recipe advice

I've looked in vain for a widely-admired extract + specialty grains clone of Westmalle Dubbel, my personal favorite (so far). There are some all-grain clones floating around, but so far the extract clone for WD I like the best is this one: http://www.beertools.com/html/recipe.php?view=9587 I...

20 lb of sugar and a jar of yeast nutrient

Today the brew shop was out of dark candi. I picked up a bottle of citric acid because I'd heard of using that to make it. I also got a bottle of yeast nutrient because, well I don't know why. Then after reading this thread, and learning about the difference between caramelization and melanoid...

.... but I want to drink my beer now!!!

After drinking two cases of beer, you'll be lucky if you can remember where you left the fermenter. :cross:

Awesome deal on equipment by way of groupon

Just call the store and ask. Some of these vendors will give you the Groupon deal after the deal expires if you call and ask them.

Using mother nature for cold crashing

I've had a lager in primary in my basement stairwell (outside) for 3 weeks. It's in a bucket fermenter, inside a big plastic storage bin full of water. On top of all that is a couple of bags of shredded documents from work (insulation) and a tarp, to keep temperature changes down and light out...

    A few new guy questions.

Glad to hear it came out well. When you said above you thought getting something drinkable the first time was a "long shot", I thought--I'll bet by now it's done and he likes it. In a few weeks you'll find it's even better.

.... but I want to drink my beer now!!!

Whoa, dude's got it bad. If you're impatient for quick results, and you like a light blonde session beer, I can recommend Biermuncher's Centennial Blonde https://www.homebrewtalk.com/f66/centennial-blonde-simple-4-all-grain-5-10-gall-42841/ It has been hugely popular on this site--over 1300...

Blonde Ale Centennial Blonde (Simple 4% All Grain, 5 & 10 Gall)

I brewed up a 5-gal extract batch of this Saturday (the extract version posted on home page). I think I forgot to measure OG, but being the extract version I'll go with 1.044. 2x 0.5oz doesn't seem like enough hops, but I'll avoid the temptation to mess with success. I pitched a single packet...
