    Beginner 2.0

    I am looking to get back into brewing after being out of it for over 7 years. I sold all my equipment and left over a hundred bottles of homebrew in front of my house when we moved from Idaho. Now I'm looking forward to getting started again....

    you really only need a secondary vessel (whether it is a bucket or a carboy) if you are dry hopping or adding fruit. I doubt you are adding fruit to an Oktoberfest..

    To add to the storage question, dipping the capped bottle in wax should help to ensure a great seal and that the bottle keeps.

    where does all the air go?

    The airlock works like the p-trap under your sink. The airlock lets co2 out but doesnt let any nasties into your beer. The p-trap lets water out but keeps the sewer gas out of your house.

    Buying Beersmith

    I am in the same boat, my trial is over and i want to buy. I will gladly buy both versions but with 7 kids at home, getting the wife to buy off on it isnt too promising. So what I will probably do is buy the version that is out now and then upgrade to the newer one at a much later date.
