    Why does my brew store only give me Nottinham Yeast?

    i lost a batch to a bad notty packet. i've since switched over to us05. i'd still be willing to use notty, but the safale is what i have on hand right now.

    About the grinding of my grains... which way would be better?

    i just have my local hbs mill my stuff for me, but if you're stuck in a pinch- i'll echo what yooper said and use a rolling pin. put a towel over the grain and go to town. ...you'll probably be at it for a while.

    Adj. strike temp for heat loss in mash tun?

    i'm going to try a new method next time i brew. lets say that the strike is 166. i'm going to heat my strike up to 166, then dump it all in to the tun, and let it sit for 10 minutes. next, i'll drain the water back into the pot, and then re heat it back to 166 to make up for the temp loss. i...

    Using hop bags.

    the single best upgrade i've ever done for my system was a drain valve out of my pot, in conjunction with the "hop taco". i got the idea from these guys http://kotmf.com/articles/hoptaco.php who in turn ripped the idea from "the hop stopper". it is awesome.

    Does a wort really need to rest before cooling?

    you can let it sit, if you like, but keep in mind that in certain hop schedules this will have a negative effect- ie your 15 minute hop addition suddenly became a 25 min because you let your hot wort sit after turning off the gas. i would think that you wouldn't want to stir it when it's hot...

    Is this weld too rusty for beer???

    +1 for new fitting. get that trash out of there. i wouldn't worry about the surface rust on the bottom of the tun tho, just clean it up as homercidal suggest.

    Protien Rest? Should have asked sooner...

    i wouldn't bother, for the exact reason you state- that is such a minimal amount of wheat. now, if you were doing a wheat/hefe then definitely, a protein rest would help. caution tho, it will be the most fermentable wort you have ever made, blowoff tube is a must.

    why do we wait for the hot break to add bittering hops?

    Kettle screening...

    i voted other, because i built the hop taco! it's a hop stopper knock-off. it's worked great so far with leaf hops, but it's getting its first all pellet run this weekend. only complaint is that it drains slow... like 2x as long as siphoning out took.
