For a nice little change i decided to add 4oz of diced ginger at 15min. Delicious! No bite with a light nose and flavor. Thinking of decarbing too 2vols and pushing it through a nitro tap!

It's a mild off flavor compared to lactic and acidic acid plus if you put some Brett in there too. Those will overpower the oxidized flavor. That's why sours age so well!
