    small 110V LED source

You might want to search Allied Electronics, Grainger or Digikey for "circuit board indicators" that match your description. I cannot see where you would need a 110 volt LED in your assembly, but I am not an engineer. You might want to elaborate more on your planned usage of the LED.

I added heavy cream to my wort!

I drank beer with a straw once while waiting for a dentist office to open on Monday after a mosh pit incident... I have also never, ever been more excited about someone else's beer. If you are bottling and want to ship a few to Florida I promise to share it with a beer judge.

    Dry vs Wet Lag time

I live in Florida, my water comes out of the tap at 70+... It makes sense if you think about it though. Yeast is to be rehydrated at 90, then you pitch in to wort a little cooler and then the temp slowly drops in the ferm chamber. Gradual temp adjustment equals no stress for the yeast.

    Dry vs Wet Lag time

I was also just thinking of doing a gin beer. I just finished an "Egyptian" beer for the museum where I made a 60% barley, 35% red wheat and 5% acidulated malt beer flavored with corriander, juniper, chamomile and bay. I tasted this lovely concoction and instantly thought of a gin beer. I was...

Does cleaning ever get you burned out on brewing?

Clean as you go for sure. I cannot brew indoors because of space constraints, so I can feel your small kitchen pain. Oxyclean is a life saver too. 1TB/gallon will make short work of anything.

I was scolded at LHBS today when I told em I don't usually use a secondary

If you like your beer then his opinion does not matter. If you like what you are doing then you are doing it well!

    Ruthless Rye

I strongly remember Terrapin, one was named Hoppin Rye or some such and a few others are lost in the fog. I don't claim to be a rye beer expert, so maybe I should have clarified that in my post. The rye beers that I have tried have a flavor note that reminds me of RAW rye flour, which is not...

St Patty's Day Black and Tan No Flavor...

Used a homebrew ESB and Guiness Special Export and it tastes like the water at the bottom of a spent cherry coke...
