I've also spoken with the 6 point guys and the Brooklyn brewery guys and they've both said that they use straight tap water in their beers with no treatment.
I've also always used tap water in my brews also.
I did a beer on sat, it wasn't any real style aside from me being at the home brew store with a hangover and picking things based off of "that smells nice and oooh those hops have a high AA%" but i noticed that they had Wyeast 3725 so i figured i'd give it a shot.
The OG was 1.063
IBU 72...
the one i did came out really great...
3.3Lbs. Liquid Wheat Malt Extract
1 lb. Wheat DME
1 lb. Crushed crystal Malt
1 oz. Hallertauer hop pellets- Bittering 60 min
10 pounds fresh cherries
i had ten pounds of cherrys that i picked the stems off and put in the fermentor and crushed them...
oh i am deff looking forward to seeing how they do. they have a great smell to them, and am all giddy as they dry....
speaking of the drying how dry is enough... they have spent two days inside drying as it was raining and now they are out in the sun and are pretty dry. but having never dealt...

i picked these hops off the side of an old barn in the back of a field in rural maine. no one seems to know how long they have been there or what kind they. However there are ALOT they just about cover the side of the barn and i was able to fill a plastic walmart bag without even putting a dent...
