I'm in Colorado in high altitude and it makes a difference. I find the 5 pumps it takes to make regular soda sometimes come out less carbonated than I like - almost like a light carbonation you would find in RedBull.

I don't have the water profile, but from experience I brewed a blonde ale back in December just to see since it tasted fine and pH readings was right at 7pH. Since I use 5.2 pH stabilizer, I figured "Why not?".

Maybe the cosmos are telling you to upgrade to a 5 gallon equipment setup. Just double your pale malt and you'll be fine.
If it's already all mixed up in one bag, I would get another 4 lbs of pale malt, mix it all together, then cut it in half. You'll have 2 batches.
Any brewers from Castle Rock? I just moved to the area and according to AHA, there is a club called the Rock Hoppers. Just visited their website and inquired about membership.
