    Reverse Swamp Cooler Fermenting

    35 to 40 degrees is pretty low and the yeast won't work as well. If you can achieve 45-50 degrees would be a more optimal fermentation. Let us know how it works though. Cheers!

    It shouldn't have any affect on gravity. It probably just finished out higher than expected. Try aeration when you pitch the yeast into the wort. Helps to awaken yeast better for fermentation.     That is way to low. You want to mash around 145 to 155 for a more fail safe brew. 68-70 is like room temp... Thats post boil when you want to pitch the yeast or fermenting which I believe is what you're talking about. Which is correct a long as it is an ale. Trial and error keep brewing.

    I would say get some tea leaves that she likes and steep in chilling wort at 180 with a good whirlpool would be my best guess. More tea, more flavor. And let us know how it turns out. I was thinking of doing something similar.
