    I'm using Lallemand Voss and white labs Ultra ferm. OG = 1.058 I fermented at 100 degrees for 3 days and just dropped the temp to 70 to drop out yeast and try to stop fermentation at 1.006. I added ultra ferm because I have only hit around 1.009 - 1.011 with Voss. In 2 days I hit 1.010...

    I've just read stuff on hop creep, not sure if this pertains to saison yeast. However I'm using a spike brewing flex. I've dry hopped 8 batches with a 4 oz dry hop and used cellar science silafine to help drop everything out before kegging.

    I'm planning on fermenting at 72 for 1 day, 75 for 2 days, and 77 for the rest of the time. I'm fairly new to brewing and this is my first time with a Saison yeast. Do you know if I dry hop at 70 after fermentation, will I have to increase the temp for a diacetyl rest?

    Interesting, all I've done for my past two closed pressure transfers is keep the co2 hooked up at 5 PSI, purge the sanitized keg multiple times and start the transfer until my fermenter is still pushing out clear beer
