    I thought it was about finished until I opened it tonight to take a gravity reading and saw the krausen on top.

    I guess my next question is should I plan on waiting a couple more weeks before bottling. I know I'll need to check the gravity, but I don't want to open my bucket any more than necessary.

    So I opened my bucket to take a gravity reading since tomorrow will be two weeks an was surprised to see this. And I thought I might be bottling this weekend. Haha.

    Thanks for the advice. This makes a lot of sense. I do have a 1 gallon carboy I got for Christmas. I might transfer some of the Irish Stout to it and add some bourbon soaked oak chips when I bottle the rest. At least I can see some of the process then.

    It smelled pretty good when I opened the bucket. Since its only my second batch I don't know what to look for. Thanks for all the advice.

    Cool. I avoided taking the lid off till tonight because I know that it can take a while for the yeast to take off. I'm guessing my bucket isn't airtight. I need to get a carboy so I can see everything easier.

    I don't remember what type of yeast they sent. It was their standard dry yeast. I pitched it at 76 which was higher than I intended. It has be sitting at about 68-69 since.

    I'm 70 hours into fermentation and I haven't seen a bubble in the airlock yet. I'm brewing midwest's Irish stout. I took a picture and attached it below.

    I tasted another bottle last night and the off flavor is going away. I'm guessing it was just really green.

    Thanks for the list. I'll have to refer to in when I open my next bottle to see if I can identify the exact flavor.

    I just brewed my first batch. It's a BB Irish Red that's been in the bottle for a week. Everything went great so far, but when I tasted the first bottle last night it had a soapy/cleanser after taste. I used star san, but that shouldn't leave an off flavor. I looked at How To Brew and John...

    While I'm Waiting...

    My first brew is fermenting, so I thought I would take a minute to say hi. I've been lurking here for several weeks now. I live in the Dayton, Ohio area where it seems home brewing is quite popular.
