Really just shooting for a sour beer that we can evolve over some years in that barrel without babysitting it too much. Probably mess around with doing blends from the barrel-aged beer. We'll just have to give it a shot and see how it comes out. Thanks for the help! :rockin:
I was planning on racking the sour beer we already made and dumping the bugs from that beer into the barrel to innoculate the fresh wort in the barrel. We used WLP655 for that one. Should I add more Lactobacillus and Pediococcus to the barrel? I was just planning on using some fresh...
Hello brewers! :mug:
I'll try to keep this as brief as possible. I'm in the military and go home to Maine for Christmas each year. Last year I got my brother into brewing and we made a batch of flemmish sour which we planned on drinking this year. Our plan was to brew a new batch each...
Excellent! Fermentation was definitely in full swing when I added the first bunch of sugar. I have it split between 2 fermenters and added 5 lbs to each in the morning, then again in the evening. I'm going to add the small incrimental additions beginning today along with the dry hops. Very...

Thanks for all the suggestions! My date got pushed back a couple months so I'll be able to get everything bottled before I go... I should have a nice stockpile of aged booze upon my return. I'll probably do a barleywine, that IPA, a mead and an apfelwein. Should hold me over for a good bit...
No I was going to secondary it before leaving. Would that be fine?
Dutch101st... just taking a stab in the dark but were you in the 101st Airborne? Best unit I've ever been in. I deployed with them during the initial invasion into Iraq.
I'm thinking right now that a barleywine, a stout...
