Your're right, I realized that as soon as I posted. Either way though its probably not a good idea. An ohmmeter and a triple check of the wiring to the diagram should be all that is needed. Although powering up an incorrectly wired panel will let you know where the problem is instantaneously.
Did you say you were going to split the 120v hot lead and connect that to the two hot leads of the 240v? That would result in a direct short, the hot leads of a 240V system are both 120V but 180 degrees out of phase so the difference is 240V.
The cheapest possible way would be to get a splitter for the CO2 line and use party taps. You could do this for beers that need to age or ones that you will not drink as frequently like a RIS.
Use these 7/8 plugs. When I built my kegarator I drilled more hole than I currently need so I did't have to do it in the future and I just filled in the remainder with these.

I would recommend the temp probe be in the output of the HEX coil. That would represent the max temperature of your mash and if you have good circulation and insulation it should also be a good indicator of overall mash temp.
