    What is your cutoff time of day to start brewing?

    Set up the night before, like to have the heat on by 8am. Best I can do is just over five hours start to finish (including cleanup). I allot six hours. Try to keep a the ingredients on hand for the next batch, such that I can take advantage of a free morning, when ever it may present itself...

    Trying to find a 15 gallon plastic drum

    I did put a bead of silicon around the top, stainless screws, etc. I believe it is sealed, but there is enough air exchange through the plastic to cause off flavors, if left greater than 2 weeks.

    Appreciate the quick and concise response. I did seal the top female thread flange with a silicone caulk, then use another weatherstrip outside the male threaded lid to seal it. Lid (which cannot be seen in pic) unscrews from top. Our beer after the first 5 gallon batch taste just fine...
