    So who's brewing this weekend?

Teaching a 101 learn how to brew today. Brewing a Mocha Porter with Mt. Rainier hops. Very bold maltiness with a prominent roast element. Big chocolate bread notes. Medium bitterness with very subtle spices, with hints of licorice. Quite sweet throughout, finishing quite sweet with some...

    Beer without hops?

I've read online that you can brew with Wormwood. They act as a great bittering hop. I'm assuming without something to balance the maltness you would end up with an overpowering sweetness.

    What irritates you about brewing?

If you're looking for a very quick turn around, brew a Wheat. It does not require secondary and you just leave it in fermenting for 2 weeks. Bottling takes another 2 to 3weeks, so move to kegging. If you force carb you can drink it in 24 hours. I have a Scottish Ale (ABV 16%) that will sit in...

    Critique My Pale Ale Recipe

Honestly I'm not a fan of cascades. But that is just my opinion. I don't think they make for a good bittering hop, Nugget or Simcoe would work well with your recipe. Amarillos are hard to find right now. If you can't find those try Centennial hops.

Just my thoughts. If you're looking for a toasty flavor add some Victory and lower the Vienna a little. Although it will darker the beer, Victory is one of my favorite Malts. Also, look at replacing the Cascade with Amarillo . Amarillo goes well with Citra. If you can find Simcoe, use those for...
