Welcome Garth. Also a Cleveland brewer here. I brew smaller batches on a similar type system. Love it. Also agree with kegging. Your wife is indeed cool, but not sure she realizes what she got herself into. This is a hobby that grows and grows.
Id just roll with it. There is no “correct” mill gap. Just the one you are used to and calibrate your equipment profile to. That’s a fairly tight mill gap that will handle all grains.
You say you have fermentation knowledge with mead. Does that include having a way to control fermentation temperatures? I’ve not done mead, so I’m not sure how important that is. Temperature controlled fermentation with a mini fridge or some other method is a huge advance in quality.
