    Austin Homebrew Pale Ale

    Brewed this 2 months ago for a friend. With some changes, added 1 lb. brown rice syrup, & 12 oz. honey. Turned out great, the additions balanced it out. I'd brew it again, and my friend is a fan too. Going to try a GF IPA for him next.

    dry hopping with ginger in secondary - need to sterilize?

    I'd just peel it and grate it then toss it in. It is as somebody stated earlier it is a natural anti septic. I am planning on doing just that, this weekend when I rack my ginger peach wit to secondary.

    Question about hop schedule for my first IPA

    I just brewed this with the standard hop schedule. It is 1 week in the bottle now, tried one yesterday, it is fantastic. Your groomsmen will love the gift. Which yeast are you using? I used the WPL001.

    Still new to brewing myself, but the low gravity reading is probably due to your top off water and wert not thoroughly mixing. Common problem with partial boils, the sugars don't mix well and your sample either reads way high or like in your case too low. Also you need to adjust your reading...

    I suck at bottling

    Bottling Gnomes at my house. Got set up and ready to bottle, had to hit the head before I started, and this is what I come back to. He did a damn fine job too.

    Beef in Bourbon Beer?

    Initially you were looking for a more flavorful chicken. Did you look at Capon? wikipedia.org/wiki/Capon#section_2 More flavorful than a conventional chicken. I see them from time to time where I am from, not sure about them in NZ.
