Let us know how it works at 40 psi n2. Right now i get good cascading w a co2precarb and beer gas mix after. But love simplicity.
At the brewery they might be placing on n2 before the stout degasses after ferment. I.e. this may be why they can get away w pure n2.
I ended up getting a larger beergas mix tank. It sucked paying for initially but it all was ok in the end.
Additionally i usually toss in a couple oz of sugar in to carb my 10g kegs for a couple weeks prior to hook up. Then i wait ;)
Sorry I never saw this. But no need to wash the petals. I just pinch the flower to cause the petals to lift off the green crown. Try not to allow any green into the "tea"
Regarding your mash temp over shoot take a look before for autotuning steps. Autotuning must be similar for that PID, and most likely will be required. If not your PID will overshoot like you are describing. I had a similar issue and believed that I had autotuned. Apparently it must not have...

No seed pods. Likely it is just washed looking petals. When you pinch the dandy head the base of the petals are white. Avoid any green pieces as it adds a bitter flavor. With the sun tea method I use it is still drinkable, but I prefer the cleaner taste of the petals only.

At this point this thread can't really do damage. We currently are getting crap prices for grain from NCM.
Perhaps you would continue to buy milk from your local grocer if they raised the price by 20-40%. I wouldn't. I would look to see what other grocer's are selling it for and go with...
