    Brewed up a Pilsner lager. The mini fridge makes fermenting so much nicer!

    I'm brewing for the first time in I don't remember how long. Going to make a lager with Pilsner malt and Calypso hops. Brushing up on my sanitation before I make a couple fresh up beers!!

    Probably, but I have had DMS when having a weak boil. That felt like much more waste of time then 30min, but on the other hand I just listened to the brewing network were a test was done and tested proving you can do it in 30 minutes and remove DMS. Mind Blown!

    Yeah, if you can get a ripping boil you could chance it, otherwise I would stick with the tried and tried 90 min boil

    I believe this is a solid answer, you would be advised to have a ripping boil, so you insure your time is not wasted. DMS is not pleasant. I would steer towards 90.

    I like the idea of switching your yeast American Ale II 1272 is a nice strain that leans more toward the malt side then Us 05

    I personally would suggest growing all centennial. (Since you, have Cascade.). Centennial doesn't seem to grow as strong as Cascade which has pros and cons. One hop you don't have on there is Northern Brewer which I think is also a good complement to ipas, but also other styles as well.
