I have liked all of the yeast you mentioned except for the Cider House Select. I don’t recall it being favourable. I find the WL-775 leaves a yeasty flavour which I like. I’ve had some good ciders from EC1118 but I just had to wait for it to age. 71-B is good but I understand it will strip some...
Like most people with an opinion, I think that mine is the best. I was able to make my own grinder and press mostly out of scraps and salvaged material. I much prefer the rack and cloth pressing method to the drum method. Building a stack of "cheeses" is much more efficient when it comes to...
While I don't intend to leave the cider in there for more than two weeks anyway, you do have a point there. I've left cider in plastic buckets for months at a time and it turned out alright but my goal is to be more disciplined moving it over to glass for long term storage this fall.
I was just...
I see some posts on the various forums about using food grade bags as liners in fermenting buckets. I am thinking of it because I fear some of my buckets are scratched and perhaps infected. I need volume as I only ferment what I press and that only happens once a year. I am only looking to do...
I will say that I’m so glad I have taken a preference to dry cider. I pasteurized my first batch of sweetened cider and I didn’t enjoy the process very much!
The only juice I’ve ever used was right off the press. I do treat with sulfite 24 hours before pitching yeast. My favourite yeast for cider so far has been White Labs WL775 Cider yeast.
I have never used a grain mill to grind apples. I’ve actually never used a grain mill for anything but based on pictures and video I have seen I will venture that it would not work well. That’s just my guess. I made my own grinder from scrap parts that works well for me.
Recently I reviewed a YouTube series I watched about 3-4 years ago and noticed something I had forgotten since the last time I watched. The guy in the video filled his keg with water and then used CO2 to push the water out through the liquid line. He then racked his cider into the keg through...
To answer my own question about sourcing CO2 in Manitoba a few posts up...I finally contacted some friends with connections and they are going to be taking my tank into Winnipeg to get it refilled for me. They are connected to a manufacturing venture that purchases a lot of gases from a major...
I'm picking up my keg purchase tomorrow. I plan on converting to legging as I am tired of bottling. Life's busy and I'd rather not have a day spent bottling keep me from brewing more cider!
