I ordered a recipe for a plain jane Porter which I will be modifying slighty in either two ways:
Dry hop with oak chips and add a pint or fifth of bourbon?
Dry hop with Jack Daniels flavored smoking chips?
I made a Hickory Brown Ale and was told to use liquid smoke along with smoking grains. I used half LS of what was suggested and it was still overpowering and artificial flavored. Im sure someone has mentioned this but just to reinforce it.........natural smoke is worth the time.

Everything I have ever seen says to start with cold water. (cooking and brewing). Plus, It sounds crazy, but the boil time is either the same or cold is faster.
When I transferred this morning, I noticed an air bubble in the hose that was sloshing the beer passing through. I know you are suppose to prevent the beer from splashing when you transfer. It was just carrying air bubbles down the hose. Does it make any difference or is there a way to prevent...
Ok, Its been a while since my last brew and just wanted to post this recipe and make sure nothing sounds odd or off kilter. Please feel free to comment or add suggestions. I am wanting to do an American Pale Ale and this is what i've got so far.

i have a brown ale that has been in the primary for almost 2 weeks. fermentation is done and i dont want to secondary it. would it be ok to bottle now or should i give it more time?
