1272 is a great yeast. Clean and clear. Probably going to go with it or the 1056. Seems the attenuation can be pretty low on the 1338 and I don't want it to end up too sweet.
Trying to dial in a nice stout with roastiness and chocolate tones.

I agree. I just tapped a FF IPA I brewed recently an it came out amazing! I used millennium to bitter. The FF hops are fantastic and I wouldn't want to take away from what they are being lost in the boil.
Also, why the change to the crystal? I used 60 and I'm curious for when, because I...
Mine came in recently. Had a few dings and about a three inch gouge in the wall. The welding is smooth on the outside but the inside not so much. Chunks of solder coming through from the outside weld. Havent had a chance to use it yet to check for leaks but I'll try to do so and post some pics...

Originally intended as an IPA, I tried to scale the IBU down a tad so SWMBO can enjoy it as well.........she's learning as I try to get her away from commercial light beer.
I really do appreciate your input though.
I am still pretty new to all-grain but trying to develop my own recipies. I had help with the grain bill but wanted to know if I am getting the hops right.
