so we brewed an IPA, added maple syrup at the end, and ended up with about 9.5% apv - we put it in secondary after about 2 weeks, then did secondary for 1 and bottled 2 weeks ago - just wondering if anyone has done a higher content beer and how long to let it sit in the bottles before opening...
I'm very happy I caught this thread - we checked the hydrometer today (7th day was planning on bottling per kit instructions) and the reading looked to be 2.8 apv.. gonna give it at least another week now. glad we didn't blindly follow the directions
thanks makes sense (the 70 degrees) what I was getting at is if you go through the cheesecloth first into the primary, wait til 70 then pitch, is that ok?

We're using a truebrew kit (red ale) and have used cheese cloth over a funnel to the carboy (primary) to remove excess hop sediment. Was this a good idea? I'm sort of worried that the hop sediment should have actually been in the carboy for fermentation. So is it ok to strain hop...
We just started this one - it suggests primary for only a week, does this sound right to those who have done it? seems quick. Then a 3 week bottling period...
(we did our first batch as a Hefe from True Brew and it turned out solid)
