Sorry if I'm posting too many but I can't stop thinking about your challenge and what I might do if in your shoes. The stout or porter seem to be an obvious choice so you may want to think about doing two beers and presenting your favorite. Perhaps do the obvious and ramp up the flavor any way...
I was just thinking about it and you might even think about pulling a gallon of whatever beer you make after primary is complete and dry hop (or dry puff) it to see what charter it adds.
I agree that the natural choice would be a porter. Specifically one that is heavy on the chocolate flavors. The only stout I could imagine working is a chocolate milk stout and you'd have to be careful not to go too heavy on the coffee notes. Do keep is posted on the deadline and your progress...
Thanks for all the great replies! I am checking out the mash calculators now but am pretty sure I'll be using the 10 gal cooler as my MLT. I was concerned about loosing beer quality in switching up to 10 gal batches instead of the 5 I'm currently doing.

I haven't tried this juice yet. I'm going to make a can and see if it'll add what I'm after first. If I like the taste I'm hoping that the two can method will give the subtle fruit addition I'm after.

I too would love to find a clone for this tasty brew! I has one in the Honolulu air port the other day and was completely thrown by how crisp and refreshing it was!!! It's one I think the wife will like too.
I batch sparged and I believe I used too much water. Over shot it by about a gallon! Or I set my efficiency too high in beersmith. I guess I could have left some in the mash tun and probably would have hit the mark. Good luck with yours!
Today was my first AG brew!!!! Home made MLT 10 gal boil pot 5 gal pot for strike water and an espresso porter in the carboy! I was only one degree off for my mash temp which is awesome. I was low for my starting gravity by 8 but my boil amount was higher than expected which is what I think...
