    Last Friday I ordered a 5.25 gallon pail of Oregon Gewurztraminer juice from Wine Grapes Direct. It was shipped Monday (Jan 25) and tracking initially said delivery this Friday (Jan 29) via Fedex Ground. Latest update now says delivery on Monday, Feb 1!     Temperature control

    My fermenter with the Winexpert Double Noir kit going strong is sitting on the window bench seat in the kitchen, with the box the fermenter came in upended over it to keep out light, i.e. at room temp (73 day, 67 night).

    Oak chips

    I am just about to pitch a Winexpert double noir that came with oak sawdust, so what I'm reading here is to just toss the sawdust, get some chips and add during secondary. Is this a correct assessment?

    Getting back into winemaking after a break

    I don't remember how long, but at least 5 or 6 months. I fermented to dry, and bottled it still, but it developed a little fizziness in the bottle. Still drinkable after about 5 years.
