    what chemical process takes place in bottle-conditioning?

    I know one process is the absorption of Co2 by the beer, forming carbonic acid. Providing a change in the taste of the beer.

    What happens if you don't mash out?

    You're screwed, I would take it out back and dump it out. Not really, at the mashing out point your stopping conversion of sugars. I think you'll be fine, especially if it's fermenting. Like everyone will say, RDWHAHB.

    MLT w/ Brew Bag?

    I've brewed several beers using this technique. It's worked fine. An issues you might run into is a little lower efficiency from wort retention.

    Opinions of this recipe, please.

    The wort was fairly dark. Not, black like a stout. OG was 1.066. I wasn't really aiming for a specific style. I had a weird idea of throwing something together to see what came of it. It actually doesn't smell too bad in the fermenter. I sure hope it turns out ok.

    Post your infection

    Pitimany, This picture appears normal to me, just a little foam and bubbles. If it starts growing hair, then I would get worried. BrewHerc.

    Possible to treat infected beer?

    Has anyone ever sprayed starsan or some other sanitizer on the whitish layer that usually signals the start of an infection? I wonder if it would work? After looking at some of the infected beer pics, it makes me wonder.

    How long is too long in primary?

    I left a IIPA in primary for three months due to a school I had to attend. It turned out great. Maybe one of the best ones I've produced.
