I wouldn't worry too much about it being too bitter. Every time I brew this it's a little maltier, a little darker, a little higher attenuation, and a little less hoppy than the real thing. I even adjusted my mash temp down and my IBUs up to compensate on my last batch. Still a delicious...
I'm brewing Schneider Aventinis clone this weekend, and I'm thinking about bumping up my grain bill from a 5.5 gallon batch to 8 gallons, then pitching some 3711 and brett into the 2.5 gallon portion as an experiment. I also plan on diluting my pre-boil wort to shoot for a OG of ~1.05 - 1.06...
I'm not crazy about my perlick flow control faucets. I bought them specifically for that reason.
I ended up running about 15 feet of line 3/16" line, and it'd manageable, but not a great pour.
Noob to all grain question. Why is it when I punch these ingredients into just about any calculator I get IBU of double what you guys get. ~145 compared to everyone's ~70 IBU?
