American IPA Dogfish Head 60 Minute Clone (AG) & Extract

I can't get Packman in Canada, so typically brew this with Denny's Favourite (Wyesat) and it turns out great. My last smack pack failed in my starter (it was too old) so pitched SF-05 and it's still good, but not as clean a finish. I'd use SF-05 (American ale) over SF-04 (British ale) because...

Let us know about Ringwood. Can't get pacman in Canada and have heard mixed reviews of Ringwood. So brewed today with Denny's Fav.

American IPA Dogfish Head 60 Minute Clone (AG) & Extract

Going to give this a try in two weeks, can't get pacman, anyone use Denny's Fav Wyeast 1450? Also, online HBS subbed centennial for Amarillo. Similar AAU, should be ok with these changes?

American IPA Dogfish Head 60 Minute Clone (AG) & Extract

They have Cara Amber & Dark Kin Amber. I don't really know the difference between these and Thomas Fawcett. I can't get Amarillo hops, so will be subbing for Centennial anyway ... I've noted their shipping is flat rate, so about $15 for a wyeast smack pack, but the same if you add 5 lbs of...

    New Brewer in Ottawa, Ontario

Try Defalcos in Ottaw. They have a few stores and can get all you'll really need. Canadian Homebrew Supply will also ship what you can't get at Defalcos.

Wyeast 3278 Extra long primary fermentation

Just pitched 2 packs of 3278 (24SEPT12 MFG date) that did not swell and so far no activity after 12 hrs. I think this is normal. Any update with your experience?

Raw wheat, flaked wheat, malted wheat in lambics

I know this isn't the right thread, but people are posting here ... I brewed a lambic yesterday, followed the Wyeast turbid mash schedule in Wild Brews and pitched 2 smack packs of Wyeast Lambic blend into 5 gal wort at 1.048 and 69F. The yeast was manufactured 24SEPT12 (relatively old stock...

Raw wheat, flaked wheat, malted wheat in lambics

I'm curious about this as well. I couldn't source raw wheat, so am planning on the following grain bill for a lambic: 4.5 lbs pilsner malt 3.5 lbs wheat malt 2 lbs flaked wheat Will age 1-2 years then blend with a new brew to carb. It there any advantage to a turbid mash without the raw...

    what exactly is blending lambics?

Thanks for the carb advice! I'll post on the results in a year or so. Just found out SWMBO has to travel to Brussels for work, so am excited about adding cantillon dregs to the wyeast lambic blend 6 months into the primary- cant get any unpasturized lambics in Ontario! Really like your blog, by...

    Wyeast 2112?

Give Creemore Lager a try. It's a favourite amber lager in Canada and warmer fermentation is recommended. I'm giving it a go next month. Recipe is here: http://byo.com/stories/article/indices/25-cloning/522-creemore-springs-lager-the-replicator
