    Hmm ...that's an interesting flavor...so you taste the beer prior to putting it in the keg and it's not there while it's in the fermenter?

    What kind of yeast should I use to make mead?

    best yeast I've used for mead (only made a few) was be-256. Nottingham was ok iirc, but produced better results with making a simple cider.

    Hmm...when I was a teenager I'd just use wd-40...would work for a short while, then it'd need reapplication. That's how they get ya!

    Have you thought about putting a glycol chiller outdoors and skipping the cold room? I've seen pro breweries do it that way. Not sure if you already have your Conicals with jackets or coils...
