    Fermentation/clearing

    Even though I only just bottled my first beer, I had tremendous success with clarity using a long primary and secondary. A quirk of bad scheduling left me with a 2 week primary fermentation, and nearly 3 weeks in my secondary. When I bottled yesterday, the beer was crystal-clear at 68degF.

    When to put extract into the boil?

    Quite a bit of variation! For the record, I use a 2 gallon boil. I start off with 2.5 gallons in the pot, knowing that 0.5 gallons will boil off. I will try some of these methods next time to see what happens.
